Sift together flour, salt and baking powder. Set aside. In a separate bowl beat the butter then add sugar a little at a time. Then add vanilla and beat until fluffy. Next beat in eggs. Stir in flour, alternating with the milk. Knead dough a few times if necessary to mix well Chill at least two hours or overnight. After chilled and when you are ready to bake pies press dough into pie or tart shells. Makes 2 large pies or 8-10 small tarts.

Ingredients:
Filling
1 stick margarine or butter (melted)
2 cups sweet potatoes, mashed
(1 lg can will work)
2 cups sugar
1 small (4 oz) can evaporated milk
1 tsp vanilla
2 eggs
1 tsp pumpkin pie spice
Directions:
Mix potatoes, sugar and margarine well. Add other ingredients and mix well. Beat until smooth. Pull out any strings from “bad” sweet potatoes. Pour into crusts. Bake 1 hour at 350° for big pies. Small tarts will cook in 35 mins or so. When in doubt cook until set and no longer jiggly.
